Ramps, also known as wild leeks, are an edible forest herb that are often the first greens to emerge in the spring. Ramps thrive in rich forest soils throughout much of the Appalachian region. Their flavor is unique, often described as a mix between garlic and onion, which is why they’re becoming increasingly popular in the commercial culinary industry. People — especially Appalachians — have been enjoying ramps for centuries. Ramps are typically harvested from wild populations but can be sustainably cultivated in your forest.
